Summery Stuff

From VT's July/August again I made three recipes. The first was Barbecued Tofu and Grilled Corn Salad. Fabulous! I never managed to get grill marks when using my grill pan but it worked great!

Next up was Roasted Vegetables (no photo). Very basic, but I never put veggies under the broiler like this with such good results. I’ll definitely do this again when making pizzas with roasted veggies. Way better than the sogfest I usually end up with cooking marinated veggies in a wok pan.

Finally, my last recipe from VT was for Mango-Teriyaki Tofu with Brown Jasmine Rice. Delicious! I used leftover salad dressing from the revolting salad I made in the last post. Super easy. Again, great grill marks on the tofu from my grill pan, except after I flipped the tofu, I left it on the grill too long/at too high of a temperature since it went beyond grill marks. I scorched the sauce onto the tofu. Kyle was kind enough to pick it off each slice :(

I then made Rainbow Rice from W Network’s He Said, She Said. I really liked watching Mary Jo Eustace and Ken Kostick in the 90’s on What’s for Dinner, so I was happy to see them pair up again. Poor MJ...I would be bitter too if my hubby left me for Tori Spelling of all people. Anyways, she came up with an interesting recipe for peanut butter in a colourful rice dish that I had to try. Sounds like it’s got everything in it but the kitchen sink. I managed to use a few substitutions (including edamame and corn instead of the peas and omitted the bananas since I will never cook with them again) and it was pretty good and very easy. I’d say it’s a comfort food dish and I liked how it had lots of protein too. I wouldn’t say that this would be a recipe that I’d serve at a fancy dinner since it doesn’t look the greatest.

Sweet or Salty?

I recently purchased Nava Atlas' Vegan Express cookbook, as I really need to find fast recipes to throw together while the little one is chipper. Since the weather is getting nicer, we've been looking for salads (Kyle wants to eat salad every day). We had an avocado and mango kicking around in the fridge, so the Black Bean Salad with Avocado and Mango seemed fitting (again, I'm nowhere near the cookbook now, so the title could be off).

I liked it, but couldn't tell if it needed to be sweet or salty. I re-read the recipe, and sure enough, no salt was mentioned. With the onions and avocado, I was looking for a salty flavour, like guac. But with the mango and lime juice, it seemed like a sweet salad.

Regardless, it was good and not spicy (conducive to breastfeeding), but I'm still wondering what to add to it to make me not question whether to add sweetness or saltiness. If anyone else makes this and has any ideas, please let me know!

Woo Hoo!

With the Ottawa Senators having clinched a spot in the Stanley Cup finals, I can now divert my attention from biting my nails to cooking - for about a week.

A couple of weeks ago, Kyle mentioned how he had ordered General Tao's chicken from a local Chinese take-out. After telling me how it tasted pretty bad, I recalled how I'd seen many on the PPK rave about a version of General Tao's tofu. I found the recipe, and made an attempt to make homemade take-out that would compete with Kyle's former meal.

And compete it did! I thought it was weird to use 3/4 cup of cornstarch to coat the tofu, and was a little worried that I wasn't frying it in enough oil (the tofu had globs of gellied cornstarch for the first 8 minutes), but they turned out great. We added 1/2 of each red and yellow peppers, but next time, we both agreed to double the sauce. There just wasn't much to coat the noodles, and I don't think it had anything to do with me mistakingly adding only 4 teaspoons of sugar instead of the whopping 4 tablespoons the recipe called for.


For dessert, I thought I'd try to do something different, yet still summery. Kyle and I have gotten into the habit of snacking on soy ice cream, and with bikini season nearly here, I was seeking an alternative. I thought I'd whip up my own creation. I can't say that I will make this again. I puréed 3 mangoes, 1 box of silken tofu, 1/2 cup sugar, the rind of one lime and the juice of half a lime. I let it sit in the fridge, but it didn't turn out as mousse-like or as mango-ey as I had hoped. After Kyle ate his share, he decided to have his usual Peanut Butter Zig-Zag soy ice cream.
