Although I'm a few days late for Valentine's Day, this could have been my entry for Vegetable Love. However, this homemade Tomato Soup from 125 Best Vegan Recipes was just an idea to have with grilled 'cheese' sandwiches last night. I really liked the soup, and felt better about eating it than I would had it been Campbell's. However, despite my use of the immersion blender, I couldn't get it to be so smooth as I have always been used to. It was still very tasty and 'hearty' though.
