Tasty Noodles

I love pasta. And I love Veganomicon. Hence, it was easy to go through the pasta section of the cookbook and find some yummy things to make!

First up - Pasta Della California - delicious! I used rotini instead of a flatter noodle since I somehow forgot to pick some up at the store (that's been happening alot lately!).

Next, as mentioned in my last post, I had to try the Baked Ziti with Caramelized Onions and Sage Breadcrumbs, as Tracy had tempted me. Omigod - this is definitely one of my new comfort foods! I can't get over how good it tasted. I served it with a simple spinach salad with dried cranberries, pumpkin seeds and sliced almonds. This dish would be ideal to take to a potluck, due to it's large size and mass appeal in terms of texture. Since I made a huge 9x13" pan worth, and didn't want to tire of it, I decided to store several individual portions in the freezer. I can't wait to reheat them in the coming weeks! Note again, I used the suggested alternative penne, since this time, I was too lazy to look for ziti at the grocery store.

That pasta looks so yummy!

I too had been tempted by the Pumpkin Baked Ziti from V-Con, but am not a huge fan of the flavor of pumpkin. Do you think that this recipe would work with, say, butternut squash instead of pumpkin?

I can't get enough of pasta, these look good. I need to buy an avocado because I've been meaning to make that Pasta della California!

Jennifer - I was worried about the pumpkin flavour, but honestly, I didn't find it overwhelming at all (I found it very sage-y!). But yeah, I think some cooked and puréed butternut squash would be fine.

I've been enjoying your blog for a while now and based on your glowing reviews, finally went out today and bought my own copy of Vcon. I sure hope you two are getting paid a commission on those book sales! :)

Thanks for sharing your adventures in vegan cooking.... it sounds as though your family members are pretty accepting of your dietary choices. This sure isn't the case in many families (I speak from experience!) so I hope you appreciate them!

Soon as I start riding my bike this year I'll have to come back and get some pasta ideas (I crave pasta after a good bike ride). Man, that looks yummy!

Oh yum, now I"m craving carbs in a major way! I should have saved some of the pumpkin ziti back when I made it!
